Suya Spice

Ingredients

  • 400g of peanut,
  • Cayenne Pepper,
  • 3tbs garlic granules,
  • 1 tbs fennel,
  • 1tbs onion granules,
  • 2tbs paprika,
  • 1tsp ground ginger,
  • 1/2 tsp of cloves,
  • 7 grains of Selim,
  • 1 magi cube.

Method

  • Roast fresh peanuts in oven till golden brown. Allow to cool and remove the outer covering/skin from the nuts.
  • Heat oven at 150°C. Grind your peanuts, spread it in a baking tray and position in the center of the oven for ten minutes. Stir the peanuts and roast for further 40 minutes.

  • Grind cloves and grains of selim.

  • Spread hot peanut on a tea towel. Fold and roll the tea towel and nuts. Firmly press the towel to extract the oil for about ten minutes. Transfer the peanuts onto another towel and continue to extract the oil for five minutes.

  • Remove peanuts from the towel and place on a tray. Add cayenne pepper, garlic granules, fennel, onion granules, paprika, ground ginger, maggi cube, ground grains of selim and cloves. Use hand covered with gloves to massage the spices into the peanut mix till incorporated. Allow to cool and sieve to obtain a smooth suya spice. Use the spice to prepare kebab.
