Poolo (Coconut Biscuit) Recipe

Ingredients

  • 190g (1.5 cups) of wholemeal flour
  • 80g desiccated coconut
  • 20g brown sugar
  • 50g butter/margarine
  • pinch of salt
  • 75ml of water
  • 1/4 tsp of mixed spice
  • 1/2 tsp of nutmeg

Method

  • Combine and mix well all dry ingredients: whole meal flour, desiccated coconut, brown sugar, salt, nutmeg, mixed spice in a medium bowl.
  • Rub in the butter with finger tips for 8 minutes. Add water and mix till firm dough is formed.

  • Flour the surface of a smooth board/working top. Roll out the dough from center to edges gently using a rolling pin to 1 cm thickness. Continue to flour the surface of the dough while rolling to prevent dough from sticking to board or rolling pin

  • Cut out the rolled out dough into a rhombus shape or any preferred shape.

  • Position frying pan containing oil for deep frying on a medium to high heat. Fry the pastry till it is golden brown. Repeat the process till all the pastries are fried.

  • Remove from oil using perforated spoon onto a strainer to drain excess oil.
