Grilled Mackerel and Tilapia fish

Ingredients

  • Tilapia and Mackerel fish
  • 1 red onion
  • 2 habanero
  • 2 cloves of garlic
  • pepper, fresh rosemary, fennel, cloves

Method

  • Wash, clean, and cut fish into preferred sizes. Soak fish in salt water for two hours to intensify the taste. Remove fish from salt water after two hours. Use kitchen towel to clean all the moisture from fish in order to ensure it is dry then set aside.
  • Combine and blend onion, garlic, ginger, peppers, rosemary fennel and cloves into a fine seasoning mix.
  • Rub the fish with the seasoning mix. Cover with cling film and set aside for three hours to allow a good marinade process.
  • Put together nutmeg, mix spice, salt and flour.
  • Place a skillet containing oil for deep frying on a medium heat. Lightly coat the marinated fish with the flour mixture and fry in the heated oil till coating turns brown. Remove fried fish from oil with a perforated spoon onto a sieve/colander to drain excess oil. Repeat process till all the fish are fried. Serve warm with Kenkey, shito or grounded pepper.
