Contemporary Ghana Cake

Ingredients

  • 175g butter
  • 130g sugar
  • 175g flour
  • 3 medium size eggs
  • 1/4 teaspoon nutmeg
  • 1/4 tsp cinnamon
  • 1 tbs vanilla extract
  • 1tsp lemon juice
  • lemon zest to taste
  • 2 tsp 7up soda
  • poppy seed to sprinkle

Instructions

  1. Preheat the oven to 180° C /gas mark 5
  2. Place the butter and sugar into the bowl
  3. Whisk the mixture until it is light and frothy for about 10mins
  4. Then add your egg one at a time until the butter mixture is well combined
  5. Add all the wet ingredients and whisk for a minute
  6. Then sieve your nutmeg, flour and cinnamon into your mixture
  7. Mix until it is well incorporate and put the butter mix into your cake tin
  8. Bake for 25minutes
