- 175g butter
- 130g sugar
- 175g flour
- 3 medium size eggs
- 1/4 teaspoon nutmeg
- 1/4 tsp cinnamon
- 1 tbs vanilla extract
- 1tsp lemon juice
- lemon zest to taste
- 2 tsp 7up soda
- poppy seed to sprinkle
- Preheat the oven to 180° C /gas mark 5
- Place the butter and sugar into the bowl
- Whisk the mixture until it is light and frothy for about 10mins
- Then add your egg one at a time until the butter mixture is well combined
- Add all the wet ingredients and whisk for a minute
- Then sieve your nutmeg, flour and cinnamon into your mixture
- Mix until it is well incorporate and put the butter mix into your cake tin
- Bake for 25minutes
