Chicken Fried Rice

Ingredients

Three spring onions, 700g chicken, one chicken stock,
6 baby corns, 100g green beans, 150g mixed peppers,
150g carrots, 150g onions, 1 tsp garlic, 1 tsp ginger
1 tbs jalapeno pepper, 2 tbs soy sauce,
1kg rice, 3 tbs oil, 2 tbs Chinese magi seasoning

Method

  • Place skillet containing oil on a medium heat. Add your ginger,        garlic, jalapeno pepper and mix together. Add carrots stirring constantly for 2 minutes. Sauté the onions and green beans also for 2 minutes. Sprinkle half of the chicken stock cube into the mixture still in the stirring mode for 2 minutes.
  • Incorporate the chicken together with the remaining stock cube for 2 minutes then mix together with the assorted peppers and baby corn. Simmer for a minute .Add rice, soy sauce and Chinese maggi seasoning to the mixture and mix till well combined
  • Turn off the heat, add the spring onions and mix till well combined. Serve warm with chicken lollipop and shito
